In this Hong Kong Wine Challenge at Island Shangri-la’s Petrus restaurant, James is posed a tough challenge by its chief sommelier, Nicolas Pierron. Pierron is presented with the Wine Challenge, which requires the restaurant sommelier to seek two wines that:
-The sommelier feels is rated 90 points or above-Is priced at HK$1,000 or below at the restaurant-And pairs perfectly with a signature dish from the restaurant
In this video at Petrus, Pierron chooses an unconventional selection as he opts to surprise Suckling with an organic Sauvignon Blanc, the Opoka, Marjan Simcic, Dobrovo 2007 from Slovenia (HK$850, read note) and a biodynamic red, the St. Laurent, Altenberg, Weingut Pfaffl, Weinviertel 2009 from Austria (HK$950, read note), pairing the two with a beautiful roast blue Brittany lobster with black pudding, beetroot and apple, and coral sauce.
