Hong Kong Wine Challenge: Caprice

James challenges head sommelier of Caprice at Four Seasons Hong Kong in this round of the Hong Kong Wine Challenge.

As they say, third time’s a charm. James heads over to Caprice, the French restaurant at Four Seasons Hong Kong, to pose his third Hong Kong Wine Challenge in hopes of finding two real gems from its extensive wine collection. The challenge requires James to blind taste two exquisite wines handpicked by head sommelier Sebastien Allano that are: – priced under HK$1,000 per bottle – available for purchase at the named restaurant – score 90 points or above

James then gives his own points for the wines selected and chooses a winner.

In this challenge, James is presented with two bottles of Shiraz: St. Joseph, Francois Villard, 2007 Syrah (HK$800, read note) and Domaine L’Aigueliere 2001 (HK$1,000, read note) and is asked to find the best pairing for the challans duck fillet, duck leg parmentier, colonnata gnocchi and endives in périgeux sauce, from Caprice.
