I am sitting at Gatwick Airport outside of London and waiting for a flight to Tuscany and drinking a 2009 Henri Bourgeois Sancerre with some Gravlax. The wine’s flinty and citrusy character with hits of peaches and bright acidity cuts through the smoked, spicy salmon. Very lively food combination all around. 91 points for the wine. Find the wine.
