Associate Editor Claire Nesbitt talks with Rare Champagne chief winemaker Emilien Boutillat and brand director Maud Rabin about the Rare Champagne 2013 and what went into its making. Boutillat compares it to the early morning light: "It's quite refreshing but still quite bright," he says.
The wine is 70 percent chardonnay with 30 percent pinot noir, mostly from the Montagne de Reims, balanced with some fruit from the Cote de Blancs, and is 100 percent vinified in stainless steel to focus on the purity of the fruit. The wine will be available on the market in June.
